Fruit pies and tarts

Fruit pies and tarts can be made with sweet versions of
– yeast pastry,
– short crust pastry,
– puff pastry,
or a cake mix.
Short crust pastry and puff pastry are extremely fatty, so you need not grease the tin before baking.
Puff pastry is a lot of work, and you can buy excellent puff pastry, even whole wheat puff pastry, at the store.
Make sure that the puff pastry is made with butter not with any other fats.
The fruit can also be arranged on a sponge base or a base made of crushed biscuits.

The kind of kind of fruit that is used deterrmines to a certain extent the pastry that serves as a base.
The apple is probably the most common fruit in Luxembourg. For baking slightly acidic varieties such as Boscop are preferable.
Fresh damson and mirabelle plums are typical for the region, but they are only available over a limited period of time in the year.
Strawberries are delicious on a pie or tart, however they are too delicate to be baked. They can be put on a base which has already been baked.
Tinned or canned fruit have already been heated. They need no further baking and can be used in the same way as strawberries.
Rhubarb is a vegetable, which is often put to the same culinary uses as fruits.

FRUIT TART WITH BAKED FRUIT AND EGGFLAN

INGREDIENTS

Pastry

Fruit: apples, tinned apricots, mirabelles, rhubarb

For the flan:

2-3 eggs

about 250ml cream

50 -75g sugar

vanilla essence or vanilla sugar

METHOD

Preheat the oven.

Grease a baking tin if necessary.

Line the baking tin with the pastry.

Prepare the fruit: peel the apples, pit the mirabelles etc. .

Put the fruit on the pastry.

Bake for about 10 minutes.

Mix the eggs with cream, sugar and vanilla essence.

Pour over the apples.

Bake for another 15-20 minutes.
